Rava Modak

One of Ganesha’s favourite sweets, Rava modak is a the healthier version of this sweet. Made of rava and stuffed with grated coconut, laced with a generous amount of jaggery, Rava or semolina modak is a class apart. Drizzle a liberal amount of honey on the warm modak and sprinkle a handful of coarsely broken and cut almonds, and pistachio. Serve this delight to Bappa and your guests this Ganesh Chaturthi.

Serves : 4 People

Cooking time : 1 hour

Ingredients: For the Modak's outer crust

  • Rava / semolina2 cups
  • 3 tbs of oil / ghee
  • Half cup water
  • 1 pinch of salt and a table spoon of sugar (optional)
  • Mould to shape Modaks

Ingredients : For the filling

  • Desiccated or grated coconut
  • Half cup Jaggery or sugar (as preferred)
  • Cardomom powder

Getting the filling ready:

  • In a wok, mix the grated coconut, jaggery and cardamom powder
  • In case you are using the dry dissected coconut, use a little water to get the moisture into the moisture
  • Cook this mixture on low flame, till it thickens
  • Once cooked, spread the filling out on a flat surface
  • Let it cool

Method: Getting the Rava ready

  • Roast the rava in a spoon of oil, till light brown
  • As the rava roasts, pour in 4 cups of water. The proportion of rava and water will always be 1:2. For one cup of rava, you will need two cups of water to cook it.
  • While cooking the rava, stir it constantly so that lumps as we do not want lumps to form
  • Cook till the rava leaves the sides of the wok
  • Spread out the cooked rava onto a flat surface, to let cool it down

Making the modak:

  • Start making the crust when the rava is still a little hot
  • Rub oil or ghee onto the palm of your clean hands
  • Make medium sized balls of Rava
  • Flatten it out on your palms
  • Place your thumbs in the middle of the flat rava ball and press down gently
  • Start working on the sides to make a small rava cup
  • Now stuff the coconut, jaggery & cardamom filling in
  • Seal the Modal in a cone
  • While you finish making the other Modaks, keep the ready one covered with a cloth to keep them from drying
  • Steam these Modaks for 15 minutes and serve
  • If you want to deep the Modaks, you make do so once the Modaks are steamed
  • You are now ready to serve the Delicious Modaks
  • Garnish with a drizzle of honey and a sprinkle of cut dry fruits
